Kuer Dadar with Coffee-Coconut Filling

The recipe of this coffee crepe is inspired by a traditional Singaporean dessert called “Kueh Dadar” it is a pandan flavored crepe with a coconut filling that is rolled like a spring roll. I decided to make a basic crepe and add coffee in the coconut filling instead, to give it a modern twist. I also think that this type of dessert can be sold as a street food because of its spring rolled shape. I thought that getting the inspiration from a traditional recipe would give it a story. I also chose coffee as a spice because, it has some health benefits like the following:

  • Coffee Can Improve Energy Levels and Make You Smarter
  • The Caffeine Can Drastically Improve Physical Performance
  • Coffee appears to be protective against two types of cancer… liver cancer and colorectal cancer.
  • Studies show that coffee drinkers have up to a 40% lower risk of liver cancer
